Description

Pennycress is a favourite filler flower for adding texture, movement, and a natural garden feel to bouquets. Its delicate stems are covered in pretty, coin-shaped seed pods in a fresh green shade that pairs beautifully with spring blooms. Direct-seed as soon as the ground can be worked. Succession-plant every two weeks for a continual harvest. Cress matures quickly and has a short harvest window.
Harvesting

Harvest when seed pods are fully formed, cutting near the base of the plant. Cress is a one-and-done type of cut-flower, however, multiple stems can be harvested from one plant.

For drying, hang upside down in a dark place until pods are completely dry.
